Cooking instructions

Defrost: Thaw in the fridge overnight for best results. Prepare: Pat dry and score the skin in a crisscross pattern. Season with salt and pepper. Sear: Place skin-side down in a cold pan over medium heat. Render fat and cook for 6-8 minutes until golden and crispy. Flip & Finish: Turn and cook for 2 minutes, then transfer to a preheated oven at 180°C (350°F) for 8-10 minutes (internal temp: 60-65°C for medium). Rest & Serve: Let rest for 5 minutes, then slice and enjoy!
